What is coconut?


Coconut, formally known as Nata de coco, is a metabolite produced by microbial fermentation and is a high quality natural dietary fiber. It is not made directly from the flesh of the coconut, but is fermented by inoculating coconut water (Coconut water) with Glucoacetobacter xylinum (Glucoacetobacter xylinum) after it has been flavored with sugar and acetic acid, and the secreted bacterial cellulose produces white fibers in the coconut water, which in turn form a gel. This gel is chemically identical to the cellulose found in plants, but has a high degree of purity and polysaccharide polymerization.
