Coconut jelly, also known as coconut fruit, is a remarkably intriguing food. It doesn’t actually come directly from the fruit of the coconut tree—but rather is produced through the microbial fermentation of coconut water. Under the right conditions, these microorganisms convert the sugars in coconut water into a polysaccharide called cellulose. This cellulose-based polysaccharide boasts a unique texture and mouthfeel, offering a smoother, more elastic consistency compared to actual coconut flesh.
